- 7 cups dry Bowtie pasta
- 4 cups fresh Spinach (rinsed and chopped)
- 1 Tbsp good-quality olive oil
- 3 cups boneless, skinless Chicken breasts (rinsed and cut into bite-size pieces)
- 1 Tbsp chopped Basil (plus extra for garnish)
- 14 ozs canned Diced tomatoes (drained)
- 1 ⅔ cups spaghetti sauce
- 1 cup cherry Tomatoes (rinsed; trimmed and halved)
- 1 ½ cups shredded Mozzarella (divided)
- ¼ cup grated Parmesan
- fresh thyme (for garnish)
Preparation steps

Preheat oven to 375ºF | 190ºC. Coat a 2-quart | 1.9 l casserole dish with cooking spray.

Cook pasta in large saucepan of boiling water according to package instructions until al dente, adding spinach for the last minute.

Meanwhile, heat the olive oil in a large nonstick skillet, set over medium-high heat. Cook the chicken and basil for 3 to 4 minutes. Stir in tomatoes and spaghetti sauce; bring to boil. Reduce heat and simmer, stirring occasionally for 3 minutes or until the chicken is cooked through.

Drain the pasta mixture; return to pan. Stir in the chicken mixture and 1 cup mozzarella; pour pasta mixture into prepared casserole dish. Bake for 20 minutes or until heated through; top with remaining cheeses. Bake for an additional 5 minutes or until mozzarella is melted.

Garnish with fresh basil and thyme. Serve.
