- 1 chicken (ready to cook, about 1.4 kg)
- 200 grams fresh button Mushroom
- 4 ripe Tomatoes
- 1 shallot
- 2 garlic cloves
- ½ bunch parsley
- salt
- freshly ground peppers
- Pastry flour (for dusting)
- 2 Tbsps olive oil
- 1 Tbsp chopped Pine nuts
- 150 milliliters dry white wine
Preparation steps

Preheat oven to 180°C (approximately 350°F.)
Rinse chicken, pat dry and cut into 8 pieces. Rinse mushrooms and cut into quarters. Blanch tomatoes, drain, peel, quarter, remove seeds and chop flesh. Peel shallot and garlic and chop finely.

Rinse parsley, shake dry, pluck and finely chop leaves. Season chicken with salt and pepper, lightly sprinkle with flour and fry in hot pan with oil until golden brown. Remove and set aside.

Add shallots and garlic to pan and sweat until translucent. Add mushrooms, sweat briefly and stir in tomatoes, parsley and pine nuts. Deglaze with wine, season with salt and pepper, add chicken and bake in preheated oven for 20-25 minutes. Serve in pan.
