Preparation steps

Cook the pasta according to package directions until al dente, drain, reserving a cup of the pasta cooking water.  Rinse the tomatoes, cut into wedges. Rinse, peel and slice the carrots. Blanch the peas in a pot of boiling salted water for 3 minutes, add the sliced ​​carrots and blanch another 2 minutes. Drain well. Cut the smoked pork and the cheese into thin strips.

Rinse the parsley, finely chop one-third of the parsley and pluck the leaves of the remaining parsley. In a large bowl, whisk together the vinegar, oil, salt, pepper and 2-3 tablespoons of the reserved pasta water. Add the chopped parsley, pasta, tomatoes, peas, carrots, smoked pork and cheese and toss to combine. Let stand 10 minutes. Taste and season with salt and pepper if desired. Arrange the salad on plates and serve garnished with parsley leaves.
