500 grams young Spinach
400 grams Penne

2 garlic cloves
75 grams Bacon (sliced)
3 Tbsps olive oil (cold pressed)
4 Tbsps slivered almonds
Parmesan (grated)
2 Tbsps lemon juice

Preparation steps

1.

Rinse and trim the spinach and drain well.

2.

Cook the pasta in plenty of salted water until al dente (collect about 1 cup of cooking water afterwards).

Peel the garlic and cut into thin slices. Cut the bacon into strips and fry, along with the garlic and almonds, in some oil until golden brown. Immediately remove from the pan (the garlic should not be too dark otherwise it will taste bitter). Add the spinach to the hot oil, allow it to wilt and season with salt and pepper.

4.

Mix the pasta with the spinach and bacon mixture. Season with lemon juice, salt and pepper and add 2-3 tablespoons of pasta water. 

Transfer to plates and serve showered with plenty of Parmesan.
