400 grams Spiral pasta (such as rotini)

2 Bell pepper (Red and yellow)
2 small Zucchini
1 fully ripe Tomato
1 garlic clove
2 Tbsps olive oil
peppers (freshly ground)
75 grams grated Parmesan
1 handful parsley

Preparation steps

Cook pasta in plenty of salted boiling water until al dente.

Rinse and halve peppers, remove seeds and ribs and cut into bite-sized pieces. Rinse zucchini, trim ends and dice. Rinse, core and cut tomato into small cubes. Peel and finely chop garlic. In a pan, sauté garlic in olive oil until translucent. Add peppers and zucchini add and sauté 2-3 minutes. Stir in tomato and season with salt and pepper. Fold in drained rotini (along with 2-3 tablespoons pasta water) and divide pasta among plates. Serve garnished with grated Parmesan cheese and parsley.
