- 14 ozs canned Cherries (drained)
- ¼ tsp Almond extract
- ⅛ cup sugar
- 1 Tbsp Corn starch
- flour (for dusting)
- 12 ozs Puff pastry
- ½ cup Cherry jam
- 1 egg (beaten)
- For the topping
- 1 cup Mascarpone
- ¾ cup cream (48% fat)
- ¼ cup sugar
- ½ tsp vanilla extract
- To decorate
- fresh Cherries (with stems)
- powdered sugar
Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6.
2.
Mix together the cherries, almond extract, sugar and cornflour until well mixed.

Roll out the pastry on a lightly floured surface and roughly line a baking dish. Spread with the jam and spoon the cherry mixture on top.

Brush the exposed pastry with egg.
5.
Bake for about 30 minutes until the pastry is golden and the filling is bubbling. Cool completely in the dish.
6.
For the topping: whisk together all the ingredients until thick and smooth. Spread on top of the filling and chill for at least 2 hours.
7.
Decorate with cherries and sift over a little icing sugar.
