300 grams mixed Berry (raspberries, strawberries, blueberries)
100 milliliters Cabbage
2 packets Vanilla sugar
1 Tbsp honey
1 Tbsp cornstarch
50 grams short grain rice
75 milliliters milk
100 milliliters Whipped cream
1 tsp grated Lemon peel
1 pinch salt
2 Tbsps Maple syrup
1 tsp cinnamon (ground)

Preparation steps

Rinse the fresh berries, remove stems and drain. Crush the strawberries. Boil in a pot the cherry juice, 1 teaspoon of vanilla and stir in the honey. Add the berries and bring to a boil again, then simmer on low heat for 2 minutes. Stir the cornflour with a little water in a pot until smooth, add the rice, boil again briefly. Place the rice aside to cool.

Mix the rice together with the milk, cream, the remaining vanilla sugar, lemon zest and salt in an ovenproof pot. Bring to a boil and cook the rice, let soak and cover over low heat for about 10 minutes. Then place rice in the oven covered for 30-40 minutes at 120°C (approximately 250°F). Mix the rice pudding with maple syrup and cinnamon, transfer to plates and add the fruit jelly. Serve warm or cold garnished with mint.
