- 14 ozs frozen Puff pastry
- 1 egg yolk (beaten)
- For the topping
- 1 garlic clove (finely chopped)
- 4 Tbsps olive oil
- 6 Tomatoes (sliced)
- ½ cup black Olives (pitted if desired)
- 2 cups fresh Mozzarella (sliced)
- 6 sprigs thyme
- Basil (to garnish)
Preparation steps
1.
Defrost the puff pastry and heat the oven to 240°C (220°C in a fan oven), 475°F, gas 9.

Mix together the garlic and 2-3 tbsp olive oil and season with salt.

Roll out the puff pastry and cut into 8-10 equal sized pieces. Brush the edges with egg yolk and the middle with the garlic oil. Place the slices on a baking tray lined with grease-proof paper.
4.
Place the tomatoes, olive and cheese on the slices and sprinkle with thyme, salt and ground black pepper. Drizzle with the remaining olive oil and bake for 15-20 minutes. Serve garnished with basil.
