80 milliliters Canola oil
150 grams Goat cheese

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Blanch peas in salted water until al dente, about 1-2 minutes. Shock in ice water and drain well.

Combine flour, 1 teaspoon salt, sugar and baking powder. Beat eggs in another bowl with buttermilk and oil. Fold flour mixture into egg mixture. Add 175 grams (approximately 6 ounces) of peas to dough and fold in 50 grams (approximately 2 ounces) of goat cheese. Season with salt and pepper. Spread half the batter into ramekins and top each with 1 tablespoon of peas. Add remaining batter and finish with remaining peas. Bake for about 25 minutes.

Remove, let cool until lukewarm and release from molds.

Combine remaining goat cheese and lemon juice. Beat cream until stiff and fold into goat cheese. Pour into a piping bag with a round tip and pipe pastries. Serve as desired.
