4 yellow Peaches (ripe)
2 Tbsps mint (finely chopped)
2 Tbsps Agave syrup
4 Tbsps lemon juice (freshly squeezed)

Preparation steps

1.

Rinse the strawberries, pat dry and cut into small cubes. Blanch the peaches in boiling water, peel and remove pits. Cut and lay four peach slices aside for decoration and then cut the rest of the flesh into small cubes.

Mix the strawberries in a bowl with the mint leaves, 2 tablespoons lemon juice and 1 tablespoon of agave syrup, then divide among 4 tall glasses, leaving approximately 8 tablespoons of strawberries in the bowl.

3.

Mix the peaches with 1 tablespoon agave syrup and 2 tablespoons of lemon juice and top up the strawberries. Cover with the remaining strawberries to complete, garnish each with a peach slice and mint as desired, and serve immediately.
