Ingredients

- For the filling
- 3 ripe Pear
- 2 Tbsps lemon juice
- ⅞ cup dry white wine
- ⅔ cup Blue cheese
- 3 Tbsps cream
- For the strudel
- 11 ozs Puff pastry (chilled)
- all-purpose flour (for working the dough)
- 2 egg yolks
- 3 Tbsps cream

Peel the pears, core and cut into eighths. Drizzle with lemon juice and simmer gently in the white wine for around 7 minutes, until soft. Remove from the liquid and leave to cool.

Preheat the oven to 400°F, and line a baking tray with grease-proof paper.

Mix together the blue cheese and the cream and season with salt and ground black pepper.

Roll the puff pastry out on a floured surface to a size of approx. 12" x 4". Spread the blue cheese mixture on top, leaving around 1.5" free at the edges. Arrange the pears on one (lengthways) half of the pastry, fold over the top half, and press the edges together well. If desired, draw a pattern on the strudel with a fork.

Whisk together the egg yolks and cream and brush over the pastry. Place the strudel on the baking tray and bake in the oven for 30-35 minutes. Serve warm or cold, with blue cheese and white wine if desired.
