Preparation steps

1.

Blanch peas in a pot of boiling salted water for 5 minutes. Drain, rinse with cold water, drain well and mix in a bowl with lemon juice and oil and season with salt and pepper.

2.

Separate eggs. Beat egg whites in a bowl until stiff with a pinch of salt. Whisk egg yolks in a bowl with Parmesan and mascarpone until smooth. Fold egg whites into egg yolk mixture and season with salt and pepper.

3.

Crumble breadsticks and spread over 4 glasses. Cover with peas (up to 1 tablespoon per glass) and fill with mascarpone mixture. Refrigerate at least 2 hours.

4.

Before serving, sprinkle with grated Parmesan and garnish with remaining peas.

5.

If desired, serve with sesame grissini.
