- 4 scallions
- 1 garlic clove
- 1 stalk Celery
- 2 Tbsps olive oil
- 1 Tbsp Tomato paste
- 150 milliliters Red wine
- 250 grams crushed Tomatoes (canned)
- 400 grams Penne
- salt
- 1 handful Lentil sprout
- 1 pinch sugar
- cayenne pepper
- 60 grated Cheese (such as Parmesan)
Preparation steps

Rinse scallions, trim and cut diagonally into thin rings. Rinse celery, trim and slice. Peel garlic, chop and sauté along with the scallions and celery in olive oil. Stir in the tomato paste, sauté briefly and pour in the wine. Add the tomatoes and simmer for about 15 minutes. If necessary, add a little water.

Cook penne in salted water until al dente.

Rinse the sprouts, drain and add to the sauce. Season with sugar, lemon juice, salt and cayenne pepper. Add the drained penne to the pan, mix well and serve sprinkled with cheese.
