400 grams Tomatoes
4 Tbsps olive oil

Preparation steps

1.

Rinse the peppers and cut into thin strips. Peel the onions and garlic, cut the onions into strips and chop the garlic. Rinse, halve and slice the tomatoes.

Heat the olive oil in a pan and saute peppers, onions and garlic for about 5 minutes. Add the tomatoes and season with salt, pepper and cumin. Simmer for approximately 10 minutes.

Meanwhile, preheat the oven to 200°C (approximately 400°F). Divide the pan contents in 4 single serving size casserole dishes. Fry the eggs and slide each one on the top of a vegetable dish. Bake about 5 minutes.
