2 bunches Basil (leaves)
2 Tbsps Pine nuts (dry roasted)
4 garlic cloves (peeled)
1 tsp Sea salt (to taste)
40 grams Parmesan
40 grams young pecorino romano
150 milliliters good quality olive oil
freshly ground peppers

Preparation steps

Add the basil, pine nuts, garlic, and 1/2 of the oil to a blender. Puree finely, then gradually add the salt, cheese, and more oil (as needed). Season to taste with pepper.

Alternatively, add the basil, pine nuts, and garlic to a mortar. Crush into a paste, and incorporate the salt, cheese, and the oil. Add more oil (by the spoonful), and season to taste with pepper.

If you'd like, place in a glass jar, cover with a little olive oil, and seal well. It will keep in the refrigerator for 1-2 weeks.
