200 milliliters Yogurt (0.1% fat) (low-fat)
150 grams sugar (brown)
250 grams Pastry flour
1 pkg Baking powder
50 grams Coconut flakes

Preparation steps

Separate eggs. Beat egg whites until stiff. Finely chop pineapple and mix with remaining ingredients (besides coconut chips) until a smooth dough forms. Fold in egg whites. Pour into wells of a muffin tray lined with paper liners and bake in a preheated oven at 180°C (approximately 350°F) for 25 minutes.

Remove tray from oven and carefully remove from muffin wells to cool. Serve garnished with coconut chips.
