- For the cake
- 1 can Mandarin orange
- 150 grams Pistachio
- 250 grams Margarine
- 200 grams sugar
- 1 packet Vanilla sugar
- 5 eggs (medium)
- Cooking oil (lemon)
- 500 grams Pastry flour
- 4 Baking powder
- also
- 100 grams Apricot jam
- 2 Tbsps Apricot liqueur
- 50 grams chopped Pistachio
Preparation steps

For the cake, drain mandarins. Grind pistachios.

Beat margarine until creamy. Add sugar, vanilla sugar, eggs and cooking oil. Mix flour with baking powder and sift into batter. Fold in pistachios and mandarins.

Grease a square baking dish 24 cm (approximately 11 inches) in length. Pour in batter and smooth. Bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for 50-60 minutes. Cook cake for 10 minutes in baking dish before flipping onto a wire rack and cooling completely.

Boil jam with apricot liqueur over high heat. Strain through a sieve and brush onto cake. Sprinkle with pistachios. Slice and serve.
