6 ozs Whipped cream

5 eggs
salt
6 ozs sugar
1 Tbsp honey
5 Tbsps water
7 Tbsps Pastry flour
7 Tbsps finely ground Pistachio

Preparation steps

1.

Break the chocolate into small pieces and combine with the cream. Heat in a saucepan until chocolate is melted.

Fill 8 ice cube molds with the chocolate mixture and freeze for 3 hours.

Preheat the oven to 400ºF and grease the bottom of the ramekins with butter.

Separate the eggs. Beat the egg whites with a pinch of salt until stiff and then gradually add 3.5 tablespoons of sugar.

Whisk the egg yolks with the remaining sugar, honey and 5 tablespoons of lukewarm water. Mix the flour with the pistachios and gently stir in the egg yolk mixture. Fold in the egg whites.

4.

Fill the prepared ramekins with the mixture and press 1 frozen chocolate cube into each one.

Bake for 15-20 minutes. Allow to cool slightly before removing from the ramekins. Serve hot or cold.
