2 cups water
1 onion (finely chopped)
1 Tbsp Oil

1 large, ripe plantain
3 Tbsps Oil

Preparation steps

Cook the rice in rapidly simmering water, covered with a lid, until tender and fluffy. Remove from the heat and leave, covered, for 10 minutes. Fluff with a fork.
2.
Fry the onion gently in the oil. Stir into the cooked rice with the salt.
3.
Peel and slice the banana. Heat 3 tbsp oil and fry the banana slices until nicely browned, turning frequently. Arrange on the rice before serving.
