- For the filling
- 6 dark red Plum (quartered, stones removed and washed)
- 1.333 cups Raspberries
- 4 Tbsps caster sugar
- For the crumble
- ¾ cup plain flour
- ½ cup cold butter (cut into pieces)
- 4 Tbsps soft, light brown sugar
- To garnish
- 1 Tbsp Sugar crystal (optional)

Preparation steps

Heat the oven to 180ºC (160ºC fan) 350ºF, gas 4.

Put the plums, raspberries and sugar into a small pan. Cook for 5 minutes to soften the fruit.

Meanwhile, put the flour and butter into a processor and pulse until the mixture resembles breadcrumbs then mix in the brown sugar.

Spoon the fruit into the base of oven-proof dish. Top with the crumble mixture and bake in the oven for 20 minutes until or until golden brown. Garnish with the sugar crystals.
