11 ozs Rice noodles
1 chili pepper (finely chopped)
3 Tbsps sesame oil
3.333 cups pork fillets (cut into strips)
2 garlic cloves (finely chopped)
1 Leek (cut into thin strips)
2 cups shiitake mushrooms (sliced)
½ cup unsalted Peanuts
2 Tbsps Fish sauce
2 Tbsps dark soy sauce
1 Tbsp brown sugar
oz fresh Thai basil (roughly chopped)
To garnish
1 red chili pepper (seeds removed and finely sliced)
1 scallion (finely sliced)

Preparation steps

1.
Put the chilli pepper into a shallow dish with 1 tbsp sesame oil.

Add the pork, stir, cover, chill and marinate for 30 minutes.
3.
Cook the noodles according to the directions on the packet and drain.
4.
Heat 2 tbsp sesame oil in a wok and stir fry the pork for a few minutes.
5.
Add the garlic and leek and stir fry for another 5 minutes.
6.
Add the mushrooms and peanuts and fry for a further 3–4 minutes. Add a splash of water, if needed.
7.
Season with fish sauce and soy sauce and sugar.
8.
Stir in the noodles and warm through, then stir in the basil.
9.
Serve garnished with red chilli and spring onion.
