1 kilogram Smoked pork chop (Cured, kitchen ready)
freshly ground peppers
2 onions
700 grams firm potatoes
2 sprigs rosemary
salt
300 milliliters Beef broth
2 Fennel bulb
2 Apple
3 Tbsps Apple jelly

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Rinse the pork, pat dry and season with pepper. Place into a greased ovenproof dish. Peel the onion, cut into columns and distribute around the pork. Cook about 1.5 hours.

Peel the potatoes, rinse and cut into bite size pieces. Distribute the potatoes and rosemary around the pork about 45 minutes before the end of cooking. Season with salt and pepper and add half of the broth.

Rinse the fennel and cut into narrow strips. Rinse the apples, core, quarter and cut into bite size pieces. Mix the apples and fennel with the potatoes around the roast about 30 minutes before the end of cooking. Add in the remaining broth too.

Warm the jelly and spread over the meat 10 minutes before the end of cooking.

Season the vegetables and the sauce, cut the pork into slices and serve with the fruit and vegetables on plate, garnished with herbs.
