- 5 cups pork fillets (sliced)
- 3 Tbsps plain flour
- 3 Tbsps sunflower oil
- 2 red peppers (diced)
- 3 carrots (sliced)
- 5 scallions (or 4 new onions, sliced)
- ½ tsp Ginger powder
- 2 garlic cloves (crushed)
- 4 Tbsps caster sugar
- 2 Tbsps Sherry vinegar
- 1 Tbsp Cider vinegar
- 3 Tbsps soy sauce
- 2 tsps tomato puree
- ⅞ cup water
- 1 ¼ cups canned Bamboo shoots (drained)
- 6 Pineapple (cubed)
- 1 Tbsp Corn starch
Preparation steps

Dust the sliced pork with flour, shaking off the excess.

Pour the oil into a wok or high-sided frying pan and add the slivers of pork. Brown over high heat.

Add the pepper, carrots and onions. When they start to color, add the ginger powder, crushed garlic, sugar, Xérès vinegar, cider vinegar, soy sauce, tomato purée, and water. Mix together well and gently simmer for about 10 minutes.

Mix the cornstarch with a tablespoon of water and add to the mixture, stirring well. Gently boil until the sauce thickens.
5.
Add the pineapple cubes and bamboo shoots, and stir well. Cook for a further 2 minutes. Season to taste as needed.
6.
Serve with white rice.
