Ingredients

For the mash
5 cups floury potatoes (peeled and cut into chunks)
2 Tbsps dairy-free margarine
2 cups Watercress (roughly chopped)
For the garnish
4 good-quality, reduced-fat Sausage (pricked with a fork)
4 salad Tomatoes (sliced)
1 ½ Tbsps extra virgin olive oil
1 Tbsp flat-leaf parsley (finely chopped)
salt
freshly ground Black pepper

Preparation steps

For the mash: Cook the potatoes in a large saucepan of salted, boiling water for 18 - 22 minutes until tender to the point of a knife.
2.
Drain the potatoes when ready and leave them to steam off for a few minutes. Mash with the margarine and watercress, seasoning to taste with salt and pepper. Preheat the grill to hot.
3.
For the garnish: Grill the sausages until golden-brown all over and cooked through; 6-8 minutes, turning occasionally. Remove from the grill and slice into pieces.
4.
Whisk together the olive oil and parsley and use it to dress the sliced tomatoes. Season them with salt and pepper.
5.
Spoon the mash onto plates and serve with the sausages and tomatoes on the side.
