- ¼ cup butter
- ⅞ cup cream (30% fat)
- salt
- peppers
- grated Nutmeg
- For the chops
- 1 Tbsp Oil
- 4 Pork chop (bone in)
- 6 cloves garlic cloves
Preparation
Kitchen utensils
3 Pots mit Deckel, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Wooden spoon, 1 Immersion blender, 1 Tablespoon, 1 Measuring cups
Preparation steps
1.
For the mashed potatoes: put the potatoes in a large pan of salted water and bring to a boil. Cook for about 25 minutes until tender.
2.
Drain and mash with a potato masher (or push through a potato ricer). Heat the butter and cream and mix into the mashed potato. Beat well until smooth and season to taste with salt, pepper and nutmeg. Keep warm.
3.
Make 2 cm|1"deep cuts all along the fatty side of the chops using a sharp knife. This will help to make the skin crisp. Sprinkle the chops with salt and pepper.
4.
Heat the oil in a frying pan and cook the chops for 6-8 minutes (depending on their thickness) on each side until the fat is crisp and golden and the meat is cooked. Add the whole garlic cloves to the pan and cook for a few minutes until soft and just golden.
5.
Spoon the mashed potato into serving dishes and place the chops and garlic cloves on top.
