100 grams dried Apricot
8 slices Pork tenderloin (2 cm thick)

clarified butter

Preparation steps

1.

Peel the apples, rinse, quarter, core and cut into pieces. Puree with the dried fruit.

Rinse the pork and pat dry. Season with salt and pepper on both sides. Heat the clarified butter in a pan and fry the pork medallions on each side for about 4 minutes.

Arrange the pork on 4 plates and top with the fruit puree.

Serve with herb rice, if desired.

The puree can be made from any fruit varieties that you prefer.
