- 2 Tbsps olive oil
- 1 ½ cups smoked Bacon (chopped)
- 1 large onion (sliced)
- 2 cups milk
- 5 cups potatoes (sliced)
- 18 ozs Reblochon cheese (or other strong soft cows cheese)
- 1 Tbsp Chives (chopped)
- Sea salt
- freshly ground Black pepper
Preparation steps
1.
Pre-heat the oven to 180°C | 350F | gas 4.
2.
In a frying pan, heat the oil and saute the chopped bacon and the onions until softened and set aside.
3.
Add the milk, seasoning, and the potatoes and simmer for ten minutes. Drain the potatoes and save the liquid.
4.
Slice the Reblochon and grease a gratin dish with butter or oil.
5.
Arrange the sliced potatoes and Reblochon in layers with the onion, bacon, and the seasoned milk
6.
Place in the oven and bake until golden brown, 45-50 minutes. Serve garnished with the chopped chives.
