6 ½ cups floury potatoes (peeled and roughly chopped)
2 Tbsps butter
½ cup milk
1 small Cabbage (shredded)
5 Tbsps olive oil
salt
peppers

Preparation steps

1.
Boil the potatoes in a large pan of salted water until tender. Drain well then mash with the butter, milk and plenty of salt and pepper.

Meanwhile, blanch the cabbage in boiling water for 3 minutes then drain.

Heat the olive oil, goose fat or dripping in a large frying pan. Mix together the mashed potato and cabbage then place the mixture into the hot fat, pressing down gently with a spatula.
4.
Let it cook for about 2 minutes or until the bottom is nicely browned then gently turn the mixture and continue cooking for another 3-4 minutes, turing from time to time.
