4 cups Charlotte potatoes
8 rashers Bacon (streaky, American)
¼ cup butter
1 cup sugar Snap pea
salt
peppers
2 Tbsps curly parsley (finely chopped)

Preparation steps

1.
Cook the potatoes in a large saucepan of boiling, salted water until tender; usually 20-25 minutes.
2.
Drain and allow to cool a little. Slice in half and reserve to one side.
3.
Heat the grill to hot and bring a large saucepan of salted water to the boil. Grill the bacon until golden and crispy; turn halfway through cooking. Remove and drain on kitchen paper.
4.
Melt the butter in a large frying pan and saute the potatoes for a few minutes, in batches, if necessary with some seasoning.
5.
Blanch the sugar snaps at the last minute for 1 minutes, and then drain. Pat dry with kitchen paper.
6.
Arrange the potatoes on serving plates, along with a couple of rashers of bacon, some sugar snaps and sprinkle the parsley on top. Serve hot.
