180 grams starchy potatoes
salt
180 grams Pastry flour
1 ½ tsps Baking powder
2 eggs
60 grams butter (melted)
250 milliliters milk
2 Tbsps finely chopped Fresh herbs (such as parsley, chives, chervil)

Preparation steps

1.

Rinse the potatoes and cook for 25-30 minutes in boiling salted water. Drain, rinse with cold water and press through a potato ricer. Mix the flour with the baking powder and a pinch of salt. Whisk in the eggs, butter and milk until smooth. Stir in the potatoes and herbs.  

2.

Heat the waffle iron and brush with butter to prevent the waffles from sticking. Spoon 2-3 tablespoons of the potato mixture into the waffle iron and cook until golden brown. Repeat with the remaining potato mixture. 

3.

Serve immediately.
