1 garlic clove
50 grams butter
4 Pear
2 Tbsps lemon juice
600 grams starchy potatoes
100 grams Gruyere
1 pinch grated Nutmeg
white peppers (freshly ground)
cayenne pepper
salt
l milk
l Whipped cream

Preparation steps

1.

Peel and quarter pears, core and cut into thin slices, immediately sprinkle with lemon juice.

2.

Peel potatoes and slice with the vegetable slicer into about 2 mm (approximately 1/7 inch) thin slices.

3.

Butter large gratin pan. Arrange potato and pear slices in the pan, overlapping.  

4.

Whisk cream with milk and season with salt, pepper, nutmeg and cayenne pepper, pour over gratin. Bake in preheated oven at 160°C (approximately 325°F) for about 45-50 minutes. 

5.

Spread with butter flakes and brown under hot broiler for about 5 minutes, watching carefully. Season with pepper and serve.
