Potato and Sausage Ragout

- 500 grams waxy potatoes
- 1 Red Bell pepper
- 1 green Bell pepper
- 1 carrot
- 2 onions
- 2 Tbsps Pastry flour
- 2 Tbsps butter
- salt
- freshly ground peppers
- 100 grams Bacon
- 2 tsps hot ground paprika
- 1 tsp ground paprika
- 1 bay leaf
- 1 splash lemon juice
- 1 lemon
- 2 Tbsps Tomato paste
- 4 Hot dogs
- 4 Debrecener sausages
- 100 grams Garlic sausage (sliced)
- 1 Tbsp finely chopped parsley
Preparation steps
Peel and dice the potatoes. Peel and slice the carrots. Cut the onions into wedges and dice the bell peppers. Cut the bacon into strips. Melt the butter in a large pan and sauté the onions until softened.
Add the potatoes, carrot, bell peppers and bacon to the pan. Season with both paprikas, salt and pepper. Stir in the bay leaf and lemon slices. Sprinkle the flour over everything then stir the tomato paste, lemon juice and about 800 ml (approximately 3 1/2 cups) of water. Bring to a boil, then reduce the heat and add the sliced garlic sausage. Simmer for 20-30 minutes.
Heat 500 ml (approximately 2 cups) of water in a saucepan and bring to a simmer. Place the Debrecene and Vienna sausages in the water and simmer until the sausages are heated through. Ladle the stew into hot bowls and top with the well-drained sausages. Garnish with fresh parsley.
