500 grams potatoes
4 Tomatoes
1 shallot
1 garlic clove
1 Tbsp Tomato paste
3 Tbsps olive oil
800 milliliters Chicken broth
100 grams Bacon (diced)
2 Tbsps Basil (freshly cut)
2 Tbsps Crème fraiche
Sea salt
freshly ground peppers
4 Tbsps Whipped cream

Preparation steps

1.

Peel and rinse potatoes, dice.

2.

Rinse tomatoes, remove stalks and dice.

3.

Peel shallot and garlic and chop.

4.

Heat oil in a saucepan and saute potatoes, shallot and garlic.  Add tomato paste and mix well. Deglaze pan with broth. Add tomatoes and simmer on low heat for about 20-25 minutes. 

5.

Cook bacon in a frying pan until crispy. Drain on paper towels.

6.

Puree soup coarsely. Add creme fraiche and season with salt and pepper. Pour soup into bowls, top with dollops of whipped cream and sprinkle with bacon and basil. Serve.
