1 kilogram starchy potatoes
stale kaiser roll
1 tsp clarified butter
100 milliliters milk
salt

Preparation steps

1.

Peel 500 grams (approximately 2 cups) of the potatoes and cook in a pot of boiling salted water until knife-tender, about 30 minutes.

Cube the bread. Heat the butter and cook the bread until golden.

Peel, rinse and finely grate the remaining potatoes. Squeeze the excess moisture from the potatoes. Scald the milk on the stove. In a bowl, stir the raw potatoes with the milk. Press the cooked potatoes through a ricer into the bowl. Stir until thoroughly combined and season with salt to taste. Using moist hands, shape the potato mixture into dumplings. Press some of the toasted bread into the center of each dumpling.

Bring a large pot of salted water to a boil. Add the dumplings and cook over low heat for 30 minutes.
