1 kilogram potatoes (baking)
50 grams Pastry flour
2 eggs
4 Tbsps Pastry flour
2 Tbsps parsley (chopped)
2 slices Toast
2 Tbsps butter
salt
Nutmeg (freshly grated)

Preparation steps

1.

Rinse potatoes and boil in salted water until tender, about 30 minutes.

Chop bread. Heat butter in pan. Fry bread until golden brown, remove and drain on paper towels.

Peel potatoes and press through a ricer. Put back in pot over low heat to evaporate excess liquid. Knead together potatoes, flour, eggs and parsley to form a smooth dough. If the dough is too soft, add extra flour. Season well with salt and nutmeg. Form tennis ball-sized dumplings, flatten slightly and roll in fried bread. Boil in salted water for about 25 minutes. Drain and serve.
