For the dumplings
500 grams cooked potatoes (prepare the day before, if desired)
500 grams starchy potatoes (raw)
125 milliliters warm milk
4 Tbsps Potato flour
salt
freshly ground peppers
freshly grated Nutmeg
For serving
125 grams butter
100 grams breadcrumbs

Preparation steps

Peel the cooked potatoes and press through a ricer. Peel, rinse and finely grate the raw potatoes. Press well in a kitchen towel to remove liquid, then mix with the warm milk, potato flour and riced potatoes. Add salt, pepper and nutmeg and form mixture into small dumplings.

Heat salted water in a saucepan and add the dumplings, then reduce the heat and let the dumplings simmer for about 20 minutes. When they float to the surface, remove them with a slotted spoon and drain well. 

3.

Melt the butter in a frying pan and fry breadcrumbs until golden brown. Serve the dumplings on plate sprinkled with breadcrumbs.
