800 grams starchy potatoes (medium to large)
2 liters vegetable oil

Preparation steps

1.

Peel and rinse the potatoes and cut into 8 mm thick sticks (approximately 1/4 inch). Rinse the potato strips in a bowl with cold water, drain and pat dry with paper towels.

Heat the oil to 160ºC (approximately 325ºF) in a saucepan.

Fry the potato sticks in portions with a skimmer for 3-4 minutes until pale yellow. Raise out of the fat, drain and place back on kitchen paper. Allow to cool.

3.

Increase the temperature of the oil to 180°C (approximately 350ºF) and fry the potatoes for another 2-3 minutes until golden brown and crispy. Remove from the fat and drain again on absorbent paper.

Keep warm in the oven at 100°C (approximately 200ºF) while frying the rest of the fries.

4.

Season with salt before serving.
