600 grams boiled new potatoes
250 grams Chorizo
2 Tbsps olive oil
8 eggs
50 milliliters Whipped cream
1 Tbsp freshly chopped rosemary
salt
peppers (freshly ground)
Nutmeg (freshly grated)

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Peel the potatoes, and cut into pieces. Slice the chorizo, add to a pan, and cook in oil for 1-2 minutes. Add the potatoes and cook for 2-3 minutes.

Mix the eggs with the cream and rosemary. Season with the salt, pepper, and nutmeg. Pour the mixture over the chorizo mixture and bake for 20 minutes, until golden brown.

4.

Garnish with the parlsey, and serve.
