Potato Latkes with Applesauce
Ingredients
- For the applesauce
- 2 Apple (such as Boskop)
- 1 Tbsp sugar
- 1 pc Cinnamon stick
- 4 Tbsps lemon juice
- 1 pc Lemon peel
- For the latkes
- 1 kilogram starchy potatoes
- 1 onion
- 1 cup Matzo meal
- 1 egg yolk (beaten)
- vegetable oil (for frying)
- salt
- peppers
Preparation steps
For the applesauce: Combine the lemon juice, sugar, and 100 ml (approximately 1/2 cup) of water in a saucepan and bring to a boil. Peel the apples, cut into quarters, remove the cores and cut into small cubes. Add to the saucepan along with the lemon zest and cinnamon stick and continue simmering until the apples are tender. Remove from heat and allow to cool.
For the latkes: Peel the potatoes and onion and grate both into a mesh strainer. Squeeze any liquid from the potatoes and onions and transfer to a large bowl. Stir in the matzo meal, egg yolk and oil. The mixture should resemble a thick paste. If too thin, add a bit more matzo meal. Season with salt and pepper.
Heat a bit of vegetable oil in a nonstick skillet and drop the potato mixture by spoonfuls into the oil. Fry until golden brown on both sides. Keep the latkes warm in a 70°C (approximately 150°F) oven and repeat with the remaining potato mixture. Serve warm with the applesauce on the side.
