Preparation steps

1.

Remove the crusts from the white bread and sauté in hot butter until golden brown on all sides.

Peel the potatoes and place in a saucepan. Rinse the leeks thoroughly, trim and cut into rings. Add to the potatoes, cover with water and simmer, covered, for about 20 minutes, until tender. Puree with the oil and apple juice. Serve sprinkled with croutons.
