1 Radicchio
200 grams pickled Pearl onion (from a jar)
2 Tbsps White vinegar
salt
freshly ground peppers
½ tsp sugar
2 Tbsps sunflower oil
100 grams Whipped cream
2 Tbsps chopped parsley

Preparation steps

1.

Cut potatoes into cubes. Drain pearl onions. Divide radicchio into leaves, rinse, spin dry and tear into bite-size pieces.

2.

Mix vinegar in a bowl with sugar, oil and sour cream and season to taste with salt and pepper. Add 1 tablespoon parsley and stir.

3.

Mix potatoes and onions with sour cream mixture and serve with radicchio in a bowl. Serve garnished with remaining parsley.
