4 cups boiling potatoes (roughly chopped)
1 onion (finely chopped)
½ cup milk
1 bay leaf
1 tsp salt
1 egg
1 cup Tomatoes (quartered; seeds removed and finely chopped)
cup Feta (crumbled)
½ cup flour
2 tsps fresh thyme (chopped)
peppers (to taste)
3 Tbsps Oil

Preparation steps

1.
Place the potatoes, onions, milk and the bay leaf in a medium saucepan. Add salt and simmer over medium heat for approximately 25 minutes.

Remove from heat. Remove the bay leaf and mash the potatoes. Add the egg, tomatoes and feta to the potato mixture. Stir in just enough flour to bring the mixture to a creamy consistency. Mix in the thyme and season with pepper.
3.
Heat oil in a non-stick skillet. Using your hands form dough into small pancakes and fry for 2-3 minutes on each side until golden brown.
4.
Keep finished potato cakes warm in the oven (175 degrees F). Serve on a bed of lettuce.
