- 500 grams waxy potatoes
- 9 eggs
- 250 grams sugar
- 200 milliliters lemon juice
- lemons (zest)
- 50 grams chopped almonds
- 1 Tbsp Semolina flour
- butter (for the pan)
- 2 Tbsps breadcrumbs
- powdered sugar (for dusting)
Preparation steps

Peel potatoes, rinse and cook until al dente. Let it cool and grate finely. Separate eggs. Beat egg whites until stiff with half the sugar. Beat egg yolks with the remaining sugar until fluffy.

Combine egg yolks with lemon juice, zest, almonds and semolina flour, then fold in the beaten egg whites gently. Loosely fold in potatoes.

Butter a 26 cm (approximately 10-inch) diameter springform pan, sprinkle with breadcrumbs, pour in the batter and smooth surface.
4.
Place in preheated oven at 180°C (approximately 350°F) for 90 minutes. Remove from the pan, allow to cool and dust with powdered sugar.
