650 grams young Sweet potato
salt
200 grams lamb's lettuce
4 Tbsps White vinegar
1 tsp Mustard
freshly ground peppers
6 Tbsps vegetable oil
60 grams Bacon

Preparation steps

1.

Scrub potatoes thoroughly and cook in salted water for about 25 minutes or until tender. 

2.

Drain, peel and cut into thick slices.

3.

Rinse and spin dry lettuce.

4.

Whisk vinegar with mustard and oil, season with salt and pepper. Toss potatoes with the dressing. 

5.

Cut bacon into small cubes or strips and cook until crispy in a hot pan.

6.

Arrange lettuce on plates and spread with potato salad. Sprinkle with bacon and serve.
