- 600 grams waxy potatoes
- 1 onion
- 2 Tbsps sunflower oil
- 250 milliliters Vegetable broth
- ½ bunch Radish
- ½ Cucumber
- 6 Cherry tomatoes
- 4 Tbsps White vinegar
- salt
- freshly ground peppers
- sugar
- 1 Tbsp minced Fresh herbs (such as parsley)
- 4 pairs Hot dog
Preparation steps
Scrub potatoes thoroughly and cook in a pot of boiling salted water until knife-tender, about 20 minutes. Drain and rinse in cold water, then drain again. Peel and finely chop the onion.
Heat the oil in a pot. Add the onion and cook until translucent. Pour in the bring and bring to a boil. Remove from heat, cover and let sit for 10 minutes. Stir in the vinegar, and season with salt, pepper and sugar to taste.
Rinse, trim and thinly slice the radishes. Rinse and thinly slice the cucumbers. Rinse the tomatoes and cut into 5 mm (approximately 1/8 inch) thin slices. Peel and thinly slice the potatoes. Place the potatoes in a bowl and cover with the broth mixture. Allow to sit for 20 minutes. Before serving, toss the potato mixture with the radishes, cucumbers and tomatoes. Serve with hot or cold sausages on plates. Garnish with the herbs.
