1 kilogram waxy potatoes

2 shallots
175 milliliters Vegetable broth
3 Tbsps White vinegar
2 tsps Mustard
1 pinch sugar
freshly ground peppers
8 Sausage
6 Tbsps sunflower oil
2 Tbsps scallions

Preparation steps

1.

Rinse the potatoes and boil in salted water for about 30 minutes until tender. Peel, cool, cut into slices and place in a bowl.

Peel the shallot and dice finely. Bring the shallot, broth, vinegar, mustard, sugar to a boil and season with salt and pepper. Pour over the potatoes, loosely mix and let rest for about 30 minutes.

Meanwhile, brown the sausages in a pan with 2 tablespoons hot sunflower oil. Mix the remaining 4 tablespoons of oil into the potato salad, season to taste, then transfer to a serving bowl and sprinkle with chives. Serve with the sausages.
