- 750 grams starchy potatoes
- 5 Tbsps Pastry flour
- 3 eggs
- salt
- butter (for greasing)
- apple sauce (for serving)
Preparation steps
Peel the potatoes, rinse and grate finely. Rinse thoroughly with cold water through a sieve and squeeze out over a bowl. Let the resulting potato water stand until the potato starch has settled.
Carefully pour off the water and mix the grated potatoes with the starch, flour, and the eggs. Season with salt. Heat a waffle iron and lightly grease with butter.
Spread the potato batter on the waffle iron and cook until golden brown. Serve lukewarm or cold, with applesauce for dipping.
