6 ½ cups potatoes
2 Tbsps olive oil

Preparation steps

1.
Heat the oven to 200C|400F|Gas mark 6.

Wash and dry the potatoes, but don't peel them. Cut the potatoes into wedges and place in a large bowl.
3.
Add the remaining ingredients to the bowl and mix well until the potatoes are well coated. Tip the potatoes onto a baking tray.
4.
Bake for about 30 minutes until golden brown and cooked all the way through.
