Preparation steps

Rinse the potatoes thoroughly and cook for about 25 minutes in boiling salted water.

Preheat the oven to 200°C (approximately 375°F).

Drain the potatoes, cut in half and scoop out carefully leaving 1 cm (approximately 1/2 inch) around the edges. While still warm, press the scooped out potato through a ricer and add the milk to make a smooth puree. Rinse the scallions, shake dry, trim and cut into thin rings. Mix with the cheese into the potato mixture, season with salt, pepper, and nutmeg, and spoon into the potato halves.

Arrange in a buttered baking dish and bake in the preheated oven for about 15 minutes. Remove and serve immediately.
