Potatoes with Artichokes and Green Beans

- 600 grams small potatoes
- 400 grams Green beans
- 3 Tbsps lemon juice
- 400 grams small Artichoke
- 2 onions
- 1 garlic clove
- 60 milliliters vegetable oil
- 1 pinch dried Savory
- thyme
- 30 grams Pine nuts
- salt
- peppers
Preparation steps
Rinse potatoes and cut in half lengthwise. Rinse beans, trim ends, pull off strings if needed, halve and blanch in boiling water. Combine 1 liter (approximately 4 cups) of cold water and lemon juice in a bowl. Rinse artichokes, cut off tips and peel outer leaves. Cut artichokes into quarters, remove stalks and put into lemon water.
Peel onions and garlic, Halve onions and cut into fine slices. Chop garlic finely. Heat half of oil in a nonstick skillet, saute drained artichokes for about 20-30 minutes, stirring. Add vegetable broth and simmer for about 20 minutes. Heat remaining oil in a second pan and cook potatoes and onion slices, garlic, savory and thyme for about 15-20 minutes, stirring. Combine beans with pine nuts and add to potatoes. Cook together briefly and add artichokes. Heat through. Season with salt and pepper and serve on warmed plates.
